Directions

Grease a 9x13-inch baking dish with the butter. Cut the brioche loaf (450g) into 1-inch cubes and arrange them evenly in the prepared dish. Sprinkle the mixed berries (300g) over the bread cubes.
- Mark step 2 done
In a large bowl, whisk together the large eggs (8), whole milk (5dl), heavy cream (1dl), brown sugar (100g), vanilla extract (10ml), and ground cinnamon (7.5ml) until smooth and well combined.
- Mark step 3 done
Pour the custard mixture evenly over the bread and mixed berries (300g) in the baking dish. Press down gently on the bread to ensure it absorbs the liquid. Cover the dish tightly with foil and refrigerate overnight to soak (about 8 hours).
- Mark step 4 done
The next morning, preheat the oven to 175°C. Remove the casserole from the refrigerator and let it sit at room temperature while the oven heats.
- Mark step 5 done
Bake the casserole covered with foil for 30 minutes. Remove the foil and continue baking for another 25 to 30 minutes, or until the center is set, puffed, and the top is golden brown.
- Mark step 6 done
Let the casserole cool for 15 minutes before slicing. Serve warm with maple syrup (1dl). If storing leftovers, cool in shallow containers and refrigerate within 2 hours; keeps for up to 3 days.
